These tacos are made from scratch with raw ingredients from the outer perimeter of the store. Nothing packaged, nothing chemical.
You will need a tortilla recipe to pair with the filling. Make the homemade tortillas first and then keep them warm by covering with foil. Once you get practiced, you can make the tortillas and ground beef filling simultaneously.
When frying with olive oil, always use the light or extra light olive oil as it can stand heat. Light olive oil also has almost no distinctive flavor so it can be used when baking too. Save the extra virgin olive oil for salads and when adding to finished dishes.

Steps of preparation
- Preheat the oven to 350 deg F. Wrap the corn in foil with the husk still on and put it in the oven. Set a timer for 30 min.
- Wash the fresh produce.
- Chop up the onion into small pieces. Then add to the skillet with a splash of olive oil or a scoop of coconut oil or tallow. Let it cook over medium heat, stirring frequently to keep it from burning.
- Chop up the bell peppers and the jalapeno peppers. Add them to the skillet with the onion. Let them all cook for several minutes.
- Add ground beef to the skillet with the peppers and onion. Sprinkle in 1 tsp of salt. Once the beef is cooked through, taste it and add more salt if needed.
- Remove the corn form the oven once the timer goes off. Use a sharp knife to cut the kernels from the cob. Put the corn into a bowl. Chop the lettuce up into small pieces..
- Serve the taco filling in homemade tortillas and then top with corn, sour cream, lettuce, and cheese.
